If your holiday is short, Langtang is the best Himalayan trek you can do. There's no flight to catch at the start: you simply drive north from Kathmandu to Syabrubesi and walk up the Langtang Khola, through oak and rhododendron forest that's home to red pandas and langur monkeys.
Above Lama Hotel, the valley opens out into yak pastures. Langtang village, destroyed by the 2015 earthquake, has been rebuilt by its families, and beyond it lies Kyanjin Gompa (3,870 m), with its monastery, its cheese factory and glaciers on three sides. A morning climb up Kyanjin Ri (4,773 m) gives you the whole Langtang range.
Then, rather than walk two days back down, you'll fly from Kyanjin to Kathmandu in about 45 minutes.

Yes. The trail and villages have been rebuilt, and there are lodges open all the way up the valley. Trekking here brings income straight to the families who did the rebuilding.
